TROPICAL ISLE FRENCH TOAST

Ingredients
- 1-1/2 cup honey
- 1/2 cup lemon yogurt
- 1 teaspoon orange zest
- 1/4 teaspoon ground nutmeg
- 3 eggs
- 1 cup milk
- 1 ripe banana, mashed
- 1 tablespoon flour
- 1 tablespoon sugar
- 1 teaspoon lemon zest
- 1/2 teaspoon vanilla
- 6 BAYS® English Muffins, split
- 4 tablespoons butter
Instructions
- Combine honey, yogurt, orange zest and nutmeg; set aside at room temperature. In a large bowl, combine eggs, milk, banana, flour, sugar, lemon zest and vanilla; beat well. Dip both side of muffins into egg mixture to coat well. Set aside.
- In a large skillet, heat butter over medium high heat until bubbly. Sauté muffins until golden brown, flipping once. Cut in half; arrange on serving platter. Garnish with fresh fruit, if desired. Serve with yogurt sauce.
- HINT: Freeze extra cooked French toast in a plastic freezer bag or container. Heat from frozen in microwave or oven.
