TROPICAL ISLE FRENCH TOAST

Ingredients

  • 1-1/2 cup honey
  • 1/2 cup lemon yogurt
  • 1 teaspoon orange zest
  • 1/4 teaspoon ground nutmeg
  • 3 eggs
  • 1 cup milk
  • 1 ripe banana, mashed
  • 1 tablespoon flour
  • 1 tablespoon sugar
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla
  • 6 BAYS® English Muffins, split
  • 4 tablespoons butter

Instructions

  • Combine honey, yogurt, orange zest and nutmeg; set aside at room temperature. In a large bowl, combine eggs, milk, banana, flour, sugar, lemon zest and vanilla; beat well. Dip both side of muffins into egg mixture to coat well. Set aside.

  • In a large skillet, heat butter over medium high heat until bubbly. Sauté muffins until golden brown, flipping once. Cut in half; arrange on serving platter. Garnish with fresh fruit, if desired. Serve with yogurt sauce.

  • HINT: Freeze extra cooked French toast in a plastic freezer bag or container. Heat from frozen in microwave or oven.
