Savory French Toast and Espresso Martinis

Ingredients

  • FRENCH TOAST
  • Bays® Brioche Style English Muffins
  • 12 oz Cherry Tomatoes
  • 2-3 Tbsp Olive Oil
  • Salt & Pepper to Taste
  • Fresh Thyme Seasoning to Taste
  • 1 Dozen Eggs
  • ¼ C Half & Half
  • 2 Tbsp Butter
  • Fresh Grated Parmesan
  • ESPRESSO MARTINIS (per drink)
  • 1 oz Vodka
  • 2 oz Cooled Espresso
  • 1 oz Coffee Liqueur
  • 1 Tbsp Half & Half
  • ½ C ice
  • 3 Coffee Beans

Instructions

  • FOR FRENCH TOAST
  • 1. Drizzle olive oil over cherry tomatoes and season with salt & pepper and thyme
  • 2. Bake in small casserole dish in oven for 10 mins at 350°
  • 3. Meanwhile, scramble 4-6 eggs in a bowl, combine with half & half
  • 4. Dip English muffins in batter and cook on stovetop on medium heat until lightly golden and egg is fully cooked
  • 5. Cook about 4 eggs over easy or sunny side up, set aside
  • 6. Top English muffins with oven baked tomatoes and fried egg and a dollop of butter
  • 7. Season with salt and pepper and sprinkle with a dash of fresh parmesan
  • FOR ESPRESSO MARTINI
  • 1. In a martini shaker, combine vodka, espresso, coffee liqueur, half & half and ice
  • 2. Shake until ingredients are frothy
  • 3. Pour into a martini glass and garnish with coffee beans
