Savory French Toast and Espresso Martinis

Ingredients
- FRENCH TOAST
- Bays® Brioche Style English Muffins
- 12 oz Cherry Tomatoes
- 2-3 Tbsp Olive Oil
- Salt & Pepper to Taste
- Fresh Thyme Seasoning to Taste
- 1 Dozen Eggs
- ¼ C Half & Half
- 2 Tbsp Butter
- Fresh Grated Parmesan
- ESPRESSO MARTINIS (per drink)
- 1 oz Vodka
- 2 oz Cooled Espresso
- 1 oz Coffee Liqueur
- 1 Tbsp Half & Half
- ½ C ice
- 3 Coffee Beans
Instructions
- FOR FRENCH TOAST
- 1. Drizzle olive oil over cherry tomatoes and season with salt & pepper and thyme
- 2. Bake in small casserole dish in oven for 10 mins at 350°
- 3. Meanwhile, scramble 4-6 eggs in a bowl, combine with half & half
- 4. Dip English muffins in batter and cook on stovetop on medium heat until lightly golden and egg is fully cooked
- 5. Cook about 4 eggs over easy or sunny side up, set aside
- 6. Top English muffins with oven baked tomatoes and fried egg and a dollop of butter
- 7. Season with salt and pepper and sprinkle with a dash of fresh parmesan
- FOR ESPRESSO MARTINI
- 1. In a martini shaker, combine vodka, espresso, coffee liqueur, half & half and ice
- 2. Shake until ingredients are frothy
- 3. Pour into a martini glass and garnish with coffee beans
