Toasted Prosciutto Eggs Benedict

Ingredients
- Original Bays® English Muffins
- Prosciutto
- Poached Eggs
- Pinch of Cayenne Pepper (For Serving)
- Hollandaise:
- 6 Egg Yolks
- 2 TBSP White Wine Vinegar
- 2 Cups Unsalted Buter (Melted)
- 4 TBSP Lemon Juice
- Pinch of Salt & Fresh Black Pepper
- 1 tsp Dijon Mustard
Instructions
- 1. Toast Bays English Muffins over olive oil until golden, season with salt and pepper.
- 2. In a separate pan, toast prosciutto over light olive oil until crispy.
- 3. Prepare your hollandaise sauce by whisking egg yolks with white wine vinegar over a double boiler, adding melted butter gradually and whisking constantly.
- 4. Add dijon mustard, lemon juice, salt and pepper.
- 5. Layer Bays English Muffin with prosciutto, poached egg and hollandaise, finish with a dash of cayenne pepper.
