Roasted Tomato Bruschetta

Ingredients
- 1 Package Bays® English Muffins
- 5 oz Cherry Tomatoes
- 1 Garlic Clove Minced
- 3 TBSP Extra-Virgin Olive Oil
- 1/2 Pound Fresh Ricotta Cheese
- Sage Leaves For Garnish
Instructions
- 1. Preheat the oven to 325° F
- 2. In a bowl, toss the tomatoes with the garlic and 1 tablespoon of the olive oil; season with kosher salt and pepper
- 3. Transfer the tomatoes to one side of a parchment-lined baking sheet. Bake for 35 minutes until bursting and lightly caramelized. Set aside.
- 4. Spread the ricotta on the Bays English Muffins and top with the tomatoes. Drizzle with olive oil, sprinkle with sea salt and pepper
- 5. Bake English muffins for 8 to 12 minutes or until the edges of the English muffins are golden brown
- 6. Top the English muffins with sage leaves
- 7. For easy shareable appetizer, cut English muffins into quarters
