Onion & Goat Cheese Crostini

Ingredients
- 1 Package Bays® English Muffins
- 3 Sweet Yellow Onions, Peeled and Thinly Sliced
- 2 TBSP Butter or Olive Oil
- 3 oz Goat Cheese
- 2 TBSP Balsamic Glaze
- 1 tsp Sea Salt
- Fresh Rosemary for Garnish
Instructions
- 1. Preheat the oven to 375º F
- 2. In a large cast iron skillet set over medium-high heat, add the butter and half of the sliced onions. Cook for 2 minutes until they start to soften – and add the other half of the onions. Continue to cook over high heat until they start to brown, about 5 minutes.
- 3. Reduce heat to medium low and continue to cook for 15 minutes more until they become golden and caramel in color and soft. Stir occasionally.
- 4. Top each Bays English Muffin half with caramelized onions. Crumble goat cheese onto English muffins and garnish with rosemary
- 5. Place the pan into the oven and bake for 10 minutes or until the edges of the English muffins are golden brown
- 6. Remove from the oven and drizzle with balsamic glaze and a sprinkle of coarse sea salt and serve
- 7. For easy shareable appetizer, cut English muffins into quarters
