Brioche Pear Bake

Ingredients

  • 3-5 Brioche Style Bays® English Muffins
  • 3 Eggs
  • 1 Cup Sugar
  • 1 TBSP Cinnamon
  • 1 tsp Vanilla
  • 3 Bosc Pears Thinly Sliced
  • 1 TBSP Lemon Juice
  • ¼ Cups White Wine
  • 8 oz Mascarpone
  • 3 TBSP Chopped Bacon

Instructions

  • 1. Preheat oven to 350°
  • 2. In a medium bowl, combine eggs, 1 cup of sugar (minus 2 separate TBSP for later in recipe), cinnamon, and vanilla. Mix until well combined.
  • 3. Next cut 3-5 Bays English Muffins into bite-size pieces
  • 4. Toss them into the mixture until evenly coated
  • 5. Grease an 8x8 inch baking dish
  • 6. Pour coated English muffin bits into baking dish evenly
  • 7. Cut pears in half and remove pear seeds from pear using a melon baller or spoon
  • 8. Cut each pear into thin slices
  • 9. Over medium heat; add butter, lemon juice, 1 TBSP of sugar, and white wine
  • 10. Toss in the pears and cook until softened
  • 11. Cover baked English muffins with cooked pears and bake for an additional 10 minutes
  • 12. In a medium bowl combine mascarpone, 1 Tbsp of sugar, and bacon bits. Mix well.
  • 13. Top brioche pear bake with bacon mascarpone mixture. Enjoy!
