Ingredients
- FOR PORK
6 BAYS® Original English Muffins
- 2 tsp Brown Sugar
- 1 tsp Paprika
- 1 tsp Chili Powder
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- ½ tsp Salt
- ½ tsp Chives
- ½ tsp All Spice
- ¼ tsp Ground Ginger
- ¼ tsp Ground Thyme
- ¼ tsp Cayenne Pepper
- ¼ tsp Pepper
- ½ Cup Apple Cider Vinegar
- FOR SALSA
1 Pineapple, Cored, Peeled and Cut Into Chunks
- ¼ Cup Diced Red Onion
- 1 Jalapeno Pepper, Seeded and Diced
- ¼ Cup Loosely Packed Chopped Cilantro
- 1 Tbsp Avocado Oil
Instructions
- 1. Stir together all dried seasonings and rub onto all sides of pork
- 2. Place in slow cooker and carefully add liquids to bottom (for pressure cooker, place liquids in, add rack, and place pork on rack)
- 3. Cover and cook on low for 8-10 hours (for pressure cooker set pressure to manual for 50 minutes on high and allow for a natural pressure release)
- 4. Pork should shred easily with forks. If not, add additional cooking time
- 5. Toss together all ingredients for salsa and refrigerate until ready to serve
- 6. Serve shredded pork on toasted Bays English Muffins with salsa
