Ingredients

  • FOR PORK
    6 BAYS® Original English Muffins
  • 2 tsp Brown Sugar
  • 1 tsp Paprika
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ tsp Salt
  • ½ tsp Chives
  • ½ tsp All Spice
  • ¼ tsp Ground Ginger
  • ¼ tsp Ground Thyme
  • ¼ tsp Cayenne Pepper
  • ¼ tsp Pepper
  • ½ Cup Apple Cider Vinegar
  • FOR SALSA
    1 Pineapple, Cored, Peeled and Cut Into Chunks
  • ¼ Cup Diced Red Onion
  • 1 Jalapeno Pepper, Seeded and Diced
  • ¼ Cup Loosely Packed Chopped Cilantro
  • 1 Tbsp Avocado Oil

Instructions

  • 1. Stir together all dried seasonings and rub onto all sides of pork
  • 2. Place in slow cooker and carefully add liquids to bottom (for pressure cooker, place liquids in, add rack, and place pork on rack)
  • 3. Cover and cook on low for 8-10 hours (for pressure cooker set pressure to manual for 50 minutes on high and allow for a natural pressure release)
  • 4. Pork should shred easily with forks. If not, add additional cooking time
  • 5. Toss together all ingredients for salsa and refrigerate until ready to serve
  • 6. Serve shredded pork on toasted Bays English Muffins with salsa
