Blueberry Brioche Brunch Bake

Ingredients

  • 6 Bays® Brioche Style English Muffins
  • 8 oz Cream Cheese
  • 1 TBSP Lemon Zest
  • 1 tsp Lemon Juice
  • 1 TBSP Sugar
  • 4 Eggs
  • 2 Cups Whole Milk
  • 1 Cup Sugar
  • 2 TBSP Butter
  • 3 TBSP Honey
  • 1 tsp Cinnamon
  • ¼ tsp Salt
  • 1 Pint Blueberries

Instructions

  • 1. Grease an 8x8 inch baking dish and set aside.
  • 2. In a small bowl, combine cream cheese, lemon zest, lemon juice, and 2 Tbsp of sugar. Mix well.
  • 3. Cut your Bays English Muffins in half.
  • 4. In a large bowl, combine eggs, milk, sugar, melted butter, honey, cinnamon, and salt. Whisk until well combined.
  • 5. Evenly coat each English muffin piece.
  • 6. Stagger each coated piece in baking dish.
  • 7. Layer cream cheese mixture between each piece of English muffin.
  • 8. Top with blueberries and sugar.
  • 9. Bake in oven at 350° for 45 minutes.
  • 10. Remove from oven, cut into squares and serve.
