Chorizo & Egg Breakfast

Ingredients
- 1 Pack BAYS® Original English Muffins
- 1lb Chorizo
- 6 Eggs
- 3 Avocados
- 1 Lime
- 6 Cheddar Cheese Slices
- 1/2 Cup Salsa
- Cilantro to Garnish
Instructions
- 1. Cook Chorizo until browned and cooked through
- 2. While Chorizo cooks, mash the avocados in a small bowl. Add salt and pepper to taste. Squeeze lime juice over the avocado, mash and stir.
- 3. Toast the Bays English Muffins and butter
- Assemble the sandwiches:
- 1. Place the Chorizo on one side of the English muffin
- 2. Top with egg, cheese, and salsa
- 3. Spread the avocado mash on the other side of the English muffin and place on top
- 4. Enjoy!
