Chorizo & Egg Breakfast

Ingredients

  • 1 Pack BAYS® Original English Muffins
  • 1lb Chorizo
  • 6 Eggs
  • 3 Avocados
  • 1 Lime
  • 6 Cheddar Cheese Slices
  • 1/2 Cup Salsa
  • Cilantro to Garnish

Instructions

  • 1. Cook Chorizo until browned and cooked through
  • 2. While Chorizo cooks, mash the avocados in a small bowl. Add salt and pepper to taste. Squeeze lime juice over the avocado, mash and stir.
  • 3. Toast the Bays English Muffins and butter
  • Assemble the sandwiches:
  • 1. Place the Chorizo on one side of the English muffin
  • 2. Top with egg, cheese, and salsa
  • 3. Spread the avocado mash on the other side of the English muffin and place on top
  • 4. Enjoy!
