Ingredients

  • - 1 Pack Original Bays® English Muffins
  • - Two Sticks of Butter
  • - 4 Eggs
  • - 2 Tbsp Lemon Juice
  • - ¼ tsp Paprika
  • - 1 tsp Ground Mustard
  • - Salt to Taste
  • - 2 Egg Yolks
  • - 1 tsp Vinegar
  • - 4 Slices Canadian Bacon
  • - 2 Tbsp Chives

Instructions

  • 1. In a sauce pan, melt 1 cup of butter. Set aside.
  • 2. For the hollandaise, add two egg yolks to a blender. Slowly add your melted butter and blend. Add lemon juice, paprika & mustard until well combined. Set sauce aside.
  • 3. Bake ham at 400º for 5 min
  • 4. Bring pot of water & vinegar to a simmer. With a large spoon slowly add 4 eggs to the water. Poach for about 4 mins.
  • 5. Toast and butter 4 muffin halves. Top with Canadian bacon, hollandaise, and sprinkle with paprika and chives.
