Ingredients

  • 3 BAYS® English Muffins, split and toasted
  • 1/2 cup mayonnaise
  • 1 medium red onion, very thinly sliced
  • 2 medium avocados, peeled, pitted and thinly sliced
  • juice of one small lemon or lime
  • 3 eggs, hard-boiled, cooled and peeled
  • 1 jar (2 ounces) lumpfish caviar

Instructions

  • Spread toasted English muffin halves lightly with mayonnaise. Top each with onion slices and more mayonnaise. Arrange avocado slices on muffins. Sprinkle with lemon or lime juice. Separate egg yolks from whites. Chop whites and divide equally among muffin halves. Press yolks through sieve, and spoon over chopped whites. Place a generous teaspoonful of caviar in the center of each.
