Ingredients
- 1 package (10-oz) frozen chopped spinach, thawed and squeezed dry
- 1 cup whipping cream
- 2 eggs
- 1-3/4 cups shredded Swiss cheese
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 5 BAYS® English Muffins, split
- 10 (1/4-inch thick) slices Roma tomato, divided
- 1/3 cup crumbled feta cheese, divided
- Pine nuts for garnish, if desired
Instructions
- Preheat oven to 350° F. In a large mixing bowl, combine spinach, whipping cream, eggs, Swiss cheese, salt and pepper. Place muffins, cut-side up, on a baking sheet. Spoon 1/4 cup spinach mixture over each muffin; spread evenly to cover. Top each with a slice of tomato and crumbled feta cheese. Sprinkle with pine nuts as garnish, if desired. Carefully place baking sheet in oven. Bake for 15 minutes or until golden brown. Carefully remove muffins with spatula and serve immediately.
