Ingredients

  • 12 BAYS® English Muffins
  • Butter, as needed
  • Old Bay or Cajun seasoning blend, to taste
  • 12 ounces sausage, cooked, crumbled
  • 1-1/2 cups diced green bell pepper
  • 1-1/2 cups diced red bell pepper
  • 12 large eggs
  • Salt and pepper, to taste
  • 12 slices cheddar cheese

Instructions

  • Lightly toast and spread butter over each muffin half. Sprinkle both halves with seasoning. Sprinkle sausage and peppers onto hot griddle; stir to lightly saut√©. Ladle egg over mixture. Season to taste with salt and pepper. Cook, stirring to scramble, until set. Place scrambled egg mixture on bottom half of muffin. Top with cheese; cover with top half of muffin. Wrap in foil.
