Ingredients
- 1/2 pound sharp cheddar cheese, shredded
- 1 tablespoon butter, softened
- 3 tablespoons dry sherry
- 2 teaspoons dry mustard
- Nutmeg to taste
- Cayenne if desired
- 2 pounds lean ground beef
- 1/4 cup minced onion (optional)
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 8 BAYS® English Muffins, split and lightly toasted
- 1/2 cup mango chutney
- 8 strips bacon, cut in half and cooked
Instructions
- In small saucepan, prepare Welsh rarebit sauce by combining cheese, butter, sherry, dry mustard and spices. Melt slowly over warm water, stirring constantly until sauce is smooth. Keep warm.
- Combine ground beef, onion (if using), salt and pepper. Shape into eight patties. Cook to desired doneness. Place patties on toasted muffin halves and top each burger with one tablespoon of chutney. Spoon Welsh rarebit sauce evenly over each burger. Criss-cross bacon strips over sauce. Top with muffin half.
