BACON, BEER & CHEDDAR ENGLISH MUFFIN BITES

Ingredients
- 6 BAYS® Original English Muffins, split, toasted
- 1/4 cup mayonnaise
- 1/4 cups stout, dark ale or beer
- 1 tablespoon coarse grained or spicy brown mustard
- 1/4 teaspoon hot pepper sauce
- 2 cups (8 ounces) shredded sharp cheddar cheese
- 4 slices thick-sliced applewood smoked bacon, chopped, cooked
- Smoked paprika (optional)
Instructions
- Heat oven to 425ºF.
- Combine mayonnaise, stout, mustard and hot sauce in a medium bowl; mix well. Stir in cheese and bacon.
- Spread mixture evenly over muffin halves to edges; place on cookie sheet. Sprinkle lightly with paprika if desired.
- Bake 6 to 8 minutes or until cheese is bubbly. Cut into quarters.
