ASPARAGUS PROSCIUTTO BENEDICT

Ingredients

  • 1 BAYS® English Muffin
  • 2-3 teaspoons olive oil
  • 3 asparagus spears (1/2-3/4 ounce each), trimmed and steamed
  • 2 thin slices prosciutto
  • 1 large egg, poached
  • Salt
  • Freshly ground black pepper
  • Shaved Parmesan cheese (optional)

Instructions

  • Toast muffin halves. Brush cut sides of each muffin half with olive oil. Top cut side of 1 muffin half with asparagus spears, ham, egg and salt and pepper. Top with shaved Parmesan cheese if desired. Serve with remaining muffin half.

  • Substitutions/Additions

  • – Substitute lemon zest for ground black pepper

  • – Top poached egg with shaved Parmesan cheese for a light entree
