4 BAYS English Muffins, split
2 tablespoons flavored oil, such as basil oil
1 package (9-12 ounces) flavored chicken sausages, sliced into coin-sized pieces
4 ounces goat cheese, crumbled
2 tablespoons minced red onion
1/2 cup shredded mozzarella cheese
Thinly sliced fresh basil
Thin Roma tomato slices, halved


Preheat oven and pizza stone or baking sheet to 500° F. Brush split muffins with flavored oil. Top with sausage slices and goat cheese. Sprinkle with onion and shredded mozzarella. Carefully slide pizzas onto hot pizza stone or baking sheet. Bake 6 to 8 minutes. Garnish each pizza with basil and tomato. Serve warm.


8 as an appetizer, 4 as a light main
