Country Skillet Breakfast Muffin

12 BAYS English Muffins
Butter, as needed
Old Bay or Cajun seasoning blend, to taste
12 ounces sausage, cooked, crumbled
1-1/2 cups diced green bell pepper
1-1/2 cups diced red bell pepper
12 large eggs
Salt and pepper, to taste
12 slices cheddar cheese


Lightly toast and spread butter over each muffin half. Sprinkle both halves with seasoning. Sprinkle sausage and peppers onto hot griddle; stir to lightly sauté. Ladle egg over mixture. Season to taste with salt and pepper. Cook, stirring to scramble, until set. Place scrambled egg mixture on bottom half of muffin. Top with cheese; cover with top half of muffin. Wrap in foil.
