Banana-Berry French Toast Strata

6 BAYS English Muffins, split
4 ounces reduced-fat cream cheese, softened
1 banana, peeled and thinly sliced
1 cup blueberries
6 eggs
2 cups milk
1/2 cup plus 1/4 cup sugar
1 teaspoon vanilla
1-1/2 cups maple syrup, warmed (optional)


Spray a 9-inch x 13-inch baking dish with vegetable oil spray. Spread muffin halves with cream cheese, and then cut into 1/2-inch cubes. Place in prepared dish, and cover with a layer of bananas and blueberries. In a large bowl, whisk eggs, milk, 1/2 cup sugar and vanilla. Pour mixture over muffins in dish, cover with plastic wrap, and refrigerate for 20 minutes or overnight.

Preheat oven to 325° F. Sprinkle top of casserole with remaining 1/4 cup sugar, and bake 35 to 45 minutes, or until puffed and golden. Cut into squares and serve with syrup, if desired.
