Bacon, Beer & Cheddar English Muffin Bites

6 BAYS Original English Muffins, split, toasted
1/4 cup mayonnaise
1/4 cups stout, dark ale or beer
1 tablespoon coarse grained or spicy brown mustard
1/4 teaspoon hot pepper sauce
2 cups (8 ounces) shredded sharp cheddar cheese
4 slices thick-sliced applewood smoked bacon, chopped, cooked
Smoked paprika (optional)


Heat oven to 425┬║F.

Combine mayonnaise, stout, mustard and hot sauce in a medium bowl; mix well. Stir in cheese and bacon.

Spread mixture evenly over muffin halves to edges; place on cookie sheet. Sprinkle lightly with paprika if desired.

Bake 6 to 8 minutes or until cheese is bubbly. Cut into quarters.


Makes 4 dozen bites
