Midnight Barbecue Snacks
- 4 Bays English Muffins, split
- 4 slices deli or leftover pork roast, cut to fit muffins
- 1/4 cup bottled barbecue sauce
- 4 strips bacon, cooked, drained and cut in half
- 4 slices Cheddar cheese
- 1 cup deli creamy coleslaw

Preheat oven to 325°. Place split Bays English Muffins open on a cookie sheet and bake for 3-4 minutes or until lightly toasted. Remove from oven and put muffin tops aside.

Place one slice pork, one tablespoon barbecue sauce and two half slices of bacon on each muffin bottom. Return to oven and bake for about 5 minutes or until meat is slightly warm. Remove from oven, top each with one slice of cheese then bake for another 3-4 minutes, or until cheese is melted.

Remove from oven and top each with 1/4 cup coleslaw and muffin top before serving.
