California Breakfast Muffin
12 BAYS English Muffins
12 tablespoons vegetable cream cheese
1 medium red bell pepper, diced
12 large eggs, whisked
Salt and pepper, to taste
3-4 whole avocados, cut into 24 slices
Lightly toast and spread cream cheese over each muffin half. Sprinkle red peppers onto hot griddle; stir to lightly sauté. Ladle egg over peppers; cook without stirring until set. Season to taste. Fold omelet into quarters; place on bottom half of muffin. Top with avocado; cover with top half of muffin. Wrap in foil.
