Baked Boursin and Tomato Appetizer
2/3 pint cherry tomatoes quartered
3 tablespoons minced fresh basil leaves divided
5 ounces Boursin pepper cheese
6 ounces Boursin herb cheese
6-8 tablespoons milk
Preheat oven to 350° F. Spread tomatoes in a single layer over bottom of a shallow 2- to 2-1/2-quart baking dish. Sprinkle 1-1/2 tablespoons basil leaves over tomatoes.
Combine cheeses in a small bowl. Add enough milk to form a thick, lumpy sauce. Pour mixture over tomatoes and basil, covering completely. Sprinkle with remaining1-1/2 tablespoons basil. Bake 15 to 18 minutes. Serve hot with crackers.
May be assembled 1 day ahead, refrigerated, and brought to room temperature before baking.
