Smoked Chicken and Melted Brie Sandwich

- 4 Bays English Muffins, split, lightly toasted
- 12 oz. chicken breast, smoked or regular, sliced and cooked
- roasted red pepper strips
- 4 oz. Brie, sliced
- Italian parsley

Spread each muffin half with 1 tablespoon Sun-dried Tomato Mayonnaise. Top with chicken slices, red pepper strips and a slice of Brie. Place on baking sheet and broil about 2 minutes until cheese is melted and muffin is golden brown. Garnish with Italian parsley.

Serves 4

Sun-dried Tomato Mayonnaise

- 1/2 cup mayonnaise
- 1 1/2 Tablespoons dried tomato paste or, 2 tablespoons sun-dried tomatoes in oil pulverized in blender

Combine ingredients and pulverize in blender. Makes 1/2 cup.
