Irish Pub Roast Beef Sandwiches

Serve these warm sandwiches with another Irish favorite, Potato Soup, for a toasty, satisfying meal on a cold day.

- 1/2 cup mayonnaise
- 3 tablespoons prepared horseradish
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 cups cabbage, shredded (or bagged coleslaw mix)
- 12-16 thin slices (about ¾ pound) rare roast beef
- 4 Bays English Muffins, split and toasted
- 4 thick slices (about 8-10 ounces) Irish Cheddar cheese

In a medium bowl mix mayonnaise, horseradish, salt and pepper until well combined. Add the cabbage and mix until thoroughly coated. Set aside. Divide the roast beef slices into four portions and place on English muffin bottoms. Cover with each with a slice of cheese and heat in toaster oven until cheese is melted. Mound cabbage mixture over melted cheese, top with remaining muffin halves, and serve immediately
