Bays Quarterly Recipe Contest
Summer '10 Contest: “No-Oven Summer Supper”
This recipe was submitted by Patricia Harmon of Baden, PA. In this version of the popular Italian bread salad, Patricia mixes cubes of freshly toasted Bays English Muffins with the traditional ingredients of fresh tomatoes, basil from her herb garden, vinaigrette and salt and pepper, made hearty and extra flavorful with the addition of chicken, cannellini beans, mozzarella cheese, kalamata olives and red onion.
